The company was founded in the 1990s and was later taken over in 1994 by Gary Caldwell, a local farmer and independent researcher. Following traditional European recipes, and using superior, certified organic vegetables produced on the farm, the fermented vegetables were developed during a scientific collaboration with the Food Research and Development Center (FRDC) of Agriculture and Agri-Food Canada. The fermented and organic products are now sold in Canada as well as in the United States. 

The goal of the company is to preserve and continue the traditional ferment of vegetable methods using modern science to offer sanitary and nutritious food.
